Swiss Meringue Chocolate Chip Cookies Recipe
Ingredients

- 1/2 cup
- chocolate chips
- 4 tbsp
- white sugar
- 4 tbsp
- brown sugar
- 4 tbsp
- unsalted butter (soft)
- 2
- eggs (separated into whites and yokes)
- 1/2 tsp
- baking soda
- 1/2 tsp
- vanilla
- 1/4 tsp
- salt
Directions
- Pre-heat oven to 300° F
- Make Meringue
- Find a pot that fits your mixing bowl for a double boiler setup.
- Place the egg whites and white sugar in the mixing bowl.
- Place the mixing bowl on top of the boiling water to create a double boiler.
- Whisking the mixture continuous until its temperature reaches 165° F (5-10 minutes).
- Remove from double boiler and with a stand mixer (or hand mixer) whisk on medium-high until stiff picks are achieved (15-20 minutes).
- Make Cookie Dough
- In separate large bowl, beat together the butter, egg yokes, brown sugar, baking soda, salt and vanilla.
- Beat or stir in the flour until well incorporated.
- Combine and bake
- Fold in the meringue mixture until well incorporated.
- Scoop (2 tbsp) or spoon batter into balls on a parchment lined cookie sheet.
- Bake for 30 minutes.
- Turn off oven. Keep the oven door slightly open with a wooden spoon.
- Cool cookies in the oven for 30 minutes.
